Pumpkin Pie French Toast.

Pumpkin all things! Anyone with me on that? I absolutely love fall! I love the leaves, the weather, the smell, the food, and the clothes! I mean really, what’s better than walking through colorful leaves, sunshine, and a nice breeze in boots with a light sweatshirt and pumpkin spice coffee in your hand? Oregon fall is beautiful!
I use the weekends to create a new breakfast dish! I’m on a roll with pumpkin lately! Today I made pumpkin pie French toast! Here’s the recipe!

1 egg
2 egg whites
(You can use 2 whole eggs instead)
1tbs milk
1/2tsp pumpkin pie spice
1tsp vanilla
Heat pan over medium-low heat. Spray with non stick cooking spray. Pull out 2 pieces of bread, I use whole wheat. You’re gonna wanna let the bread soak for a minute. You want to use the mixture for just two pieces of bread (if you want high protein French toast, if not you can use more bread and share.) Cook each piece for a few minutes on each side.

Mix in a small bowl
1tbs pumpkin purée
2tbs fat free cream cheese
1tbs non fat Greek yogurt
1tsp stevia (or sugar/substitute)
1tsp honey (or sugar/substitute)
2 shakes of pumpkin pie spice
Top 1 French toast with half mixture, put other French toast on top of that and top with remaining mixture. Top that with some fat free whipped cream and cinnamon. Enjoy!
