Pumpkin Spice Granola

Anyone else love granola as much as me? I love it as cereal, on Greek yogurt and by the handful! It’s so delicious. You know what else is delicious? Pumpkin! I don’t know why it took me this long to think of making pumpkin spice granola, but I finally did!

Directions:
-Preheat oven to 250 degrees.
-In bowl mix:
1tbs of coconut oil (heat if needed)
1tbs raw honey
1tsp vanilla
1/2tsp pumpkin pie spice
-Mix well and then add
1/2c oats
2tbs shredded coconut
1tbs chopped pecans
-Mix until all is well coated.
-Line baking sheet with parchment paper and spread mixture over pan.
-Place baking sheet in the oven. Slightly stir every 5-8 minutes so it doesn’t burn, for about 15-20 minutes. Pull out of the oven when it’s browned and let cool.

If desired, add a little dark chocolate when cooled. I added about 2tbs of dark chocolate chips. Enjoy!
