Banana Muffins

My boyfriend recently decided to cut wheat bagels out of his diet. He was eating two a day but replaced one with an extra serving, his serving means three regular servings, of brown rice. For the other, I started making him these banana muffins. Which he eats four of.

INGREDIENTS
-3 ripe bananas
-1 egg
-1 tbs coconut oil (melted)
-3 tbs honey
-1c oat flour
-1/2c almond meal/flour
-1 tsp baking soda
-1/4 tsp cinnamon
-1 tsp vanilla

DIRECTIONS
-Preheat oven to 350 degrees.
-Line muffin tin or spray with non stick spray.
-In a bowl mash the bananas.
-Add egg, oil, and honey to the bananas and mix well.
-Add all of the dry ingredients to the wye and mix well.
-Fill muffin tins about 3/4 the way full and bake about 20-25 minutes.

This recipe made 14 muffins both times I made them. Of course it depends what exactly you use but for my muffins the macros came out to 108 calories, 4g fat, 16 carbs, and 3g of protein per muffin.
